Quick and Easy Apple Crumble

This apple crumble is extremely low in sugar, while being loaded in fibre and immune-boosting nutrients.  Apples and oats are an amazing heart-healthy and brain-boosting combo. Both are super-high in fibre, helping to pull bad cholesterol from the body and provide sustainable energy –-  both mentally and physically.  In addition, oats are high in mood-boosting proteins, tryptophan and tyrosine, which are essential brain nutrients for happiness and drive.  Plus, the omega’s found in the granola and extra boost of hemp seeds provide additional brain-boosting power!

Makes: 4 servings

Ingredients:

  • 4 apples*, peeled, cored and diced
  • 1/3 cup water
  • 2 tsp cinnamon
  • 1 cup Cinnamon Oat Granola (see the Life Choices Recipe)
  • 1 tbsp hemp seeds

Directions:

  • In saucepan, bring apples, water and cinnamon to boil over medium heat. Reduce heat and simmer until apples are softened.
  • Divide among individually-sized serving bowls.
  • Top with Cinnamon Oat Granola. Sprinkle with hemp seeds for an extra dose of essential fatty acids and protein, and serve.

*Baking apples: The best apples to use when baking are varieties that hold their shape, such as: Cortland, Empire, Granny Smith, Gala, Jonagold and Golden Delicious. Avoid varieties such as Pink Lady or Fuji (that fall apart when baked) or Red Delicious (which tastes much better crunchy and raw).

**Alternatively, you can add apples, water and cinnamon to (x-inch x x-inch/x L) baking dish, stirring so apples are covered in cinnamon.  Top with uncooked Cinnamon Oat Granola mixture and bake in 375°F oven for 25 to 30 minutes, or until apples are cooked through.
