Fish Sticklers – Life Choices Fish Sticks With Dipping Sauce And Sweet Potato Fries

Ingredients

Dipping Sauce

  • ½ cup Greek-style plain yogurt
  • 2 dill pickles, finely minced
  • 1 tbsp fresh dill, finely minced
  • Juice of half a lemon
  • Sea salt and pepper to taste

Directions:

  • Cook Fish Sticks as per package instructions.
  • Dipping Sauce: Meanwhile, in bowl, combine yogurt, pickles, dill, lemon juice, salt and pepper.

Serve with Sweet Potato Fries

Sweet Potato Fries

Ingredients:

  • 4 sweet potatoes
  • 1/4 cup olive oil
  • Sea Salt to taste

Directions:

  • Preheat oven to 425°F.
  • Cut sweet potatoes into 1/2-inch thick lengthwise strips (the thinner the better).
  • In large pot on boiling water, blanch sweet potatoes for about 5 minutes.
  • Remove, add to a bowl of cold water to stop the cooking process.
  • Pat dry sweet potatoes well,. Spread out on large rimmed baking sheet and refrigerate for 1 hour.
  • Drizzle and toss with olive oil and sea salt..
  • Bake potatoes for 15 to 20 minutes or until golden brown on bottom.
  • Turn potatoes and bake for 15 to 20 minutes or until golden brown all over
  • Remove from oven, and serve with Fish Sticks and Dipping Sauce.
