Ingredients
Dipping Sauce
- ½ cup Greek-style plain yogurt
- 2 dill pickles, finely minced
- 1 tbsp fresh dill, finely minced
- Juice of half a lemon
- Sea salt and pepper to taste
Directions:
- Cook Fish Sticks as per package instructions.
- Dipping Sauce: Meanwhile, in bowl, combine yogurt, pickles, dill, lemon juice, salt and pepper.
Serve with Sweet Potato Fries
Sweet Potato Fries
Ingredients:
- 4 sweet potatoes
- 1/4 cup olive oil
- Sea Salt to taste
Directions:
- Preheat oven to 425°F.
- Cut sweet potatoes into 1/2-inch thick lengthwise strips (the thinner the better).
- In large pot on boiling water, blanch sweet potatoes for about 5 minutes.
- Remove, add to a bowl of cold water to stop the cooking process.
- Pat dry sweet potatoes well,. Spread out on large rimmed baking sheet and refrigerate for 1 hour.
- Drizzle and toss with olive oil and sea salt..
- Bake potatoes for 15 to 20 minutes or until golden brown on bottom.
- Turn potatoes and bake for 15 to 20 minutes or until golden brown all over
- Remove from oven, and serve with Fish Sticks and Dipping Sauce.
