Sara’s Creamy Tofuroni with Veggies

Ingredients:
-1 box Life Choices Organic Macaroni and Cheese (works with any of the three kinds available)
-75 grams of organic soft tofu
-4 tbsp of organic homo milk (feel free to use goats milk)
-3 tbsp frozen organic peas (feel free to use another frozen veg ex: broccoli or carrot-although you may have to vary their heating time accordingly))
Directions:
Follow directions given on the box for cooking pasta.
When water for pasta is about to reach boil begin sauce in a separate pot.
Start by warming the milk over medium heat.
Once warm add tofu and mash with fork.
After mashed well use whisk for smoother consistency (sauce will be thicker and have a bit of texture due to tofu- this just makes it creamier!). Continue heating and frequently whisking for five minutes.
Turn to low heat and add sauce mix a little at a time stirring with a fork initially. Once there are no large clumps switch back to the whisk, stirring frequently for remaining four or five minutes until pasta is done.
With one minute remaining add peas to sauce mixture to heat through.
Drain pasta, then mix sauce and pasta together and enjoy!
