Cinnamon Oat Granola
Makes: 4 cups.
Ingredients:
- 1 cup Life Choices Mini Oatmeal Raisin Cookies (about 20 mini cookies)
- ¼ cup coconut oil or coconut butter*
- ¼ cup apple butter
- 2 cups rolled oats
- ¼ cup shredded flaked coconut, unsweetened
- 2 tbsp ground chia seeds
- 1 tsp cinnamon
Directions
- Preheat oven to 350°F. Grease rimmed baking sheet with additional coconut oil.
- Add cookies to food processor and pulse until cookies are ground to crumbs.
- In small saucepan over low heat, heat coconut oil until melted.
- Pour into mixing bowl; using fork, stir in apple butter.
- Add oats, ground cookies, coconut, chia seeds and cinnamon; mix until well combined and coated.
- Spread granola mixture on prepared sheet and bake for 10 to 12minutes, stirring occasionally, to ensure even cooking. Transfer sheet to rack and let cool completely.
This is great to add to a yogurt parfait (see recipe), as the topping to a quick and easy apple crumble (see recipe), as a breakfast cereal, sprinkled on top of berries or eaten on it’s own! It will be stored in a sealed container for about a week.
*Note: Coconut oil and coconut butter are the same thing. However the oil will remain solid at room temperature so it will need to be gently heated to become liquid. Coconut oil is a HEALTHY fat that helps to balance blood sugar levels, is heart-healthy, helps to improve skin conditions and provides an excellent, immediate source of energy.
